Our Umami Ingredient

FEAST Ingredient umami & flavor enhancer ingredient is rich in natural umami compounds. It is organic, clean-label and made from legume seeds and salt. It enables food producers to deliver delicious, nutritious, and clean label food products.

Product Details

Technology

We have built a technology platform using adaptive controlled fermentation free from GMOs, from which we can create low dosage, clean label, functional ingredients. Our process is optimized to run on a single input raw material, in addition to salt, that can be different types of legume seed thereby adding no processing aids and ultra-processed ingredients. Legume seeds provide the micronutrients that enable microorganisms to deliver desirable natural functional compounds.

We have further based our process on legume seeds as they can be sustainable grown on a global scale and facilitate soil health being nitrogen-fixing plants which reduce the need for synthetic fertilizers.

NO side streams - we use whole organic legume seeds. No waste side stream is generated as we use the full legumes seed to produce our final powder ingredient.

We offer low-dosage ingredients, that are organic and clean label, to competitive functionality to existing synthetic and non-organic solutions replacing MSG and yeast extract.

Meet the Team

Charlotte Vinther Schmidt

CEO & Co-founder
Charlotte has a background as food science engineer and has a Ph.D. in food chemistry. She has many years of experience from research in academia combined with working as CTO and CEO in biotech startup. She has done multiple projects with the food industry within new product development, ingredient replacement, design of experiments, and process optimization. Her passion is to turn life science driven research into practical application and business opportunities that can support the delicious taste of plant-based food and the green transition of our food system.

Jesper Wang Jensen

R&D & Research Scientist
Jesper has a PhD in biotechnology from DTU and experience in bacterial fermentation and scaling up bioprocesses. He is curious and driven by a passion for fermentation and the interface between microbial physiology and industrial processes. By combining deep scientific insight with practical engineering constraints, he develops innovative biosolutions for the future of quality clean label food ingredients.

Jildau Emma Bras

R&D & Research Scientist
Jildau has an industrial PhD in Systems biology and Bioinformatics from DTU and MSc in Life Science and Technology. She bring experience in combinatorial microbiology and adaptive laboratory evolution and computational science which is key to develop competitive bioprocess strategy that is clean label and organic.
