Our Umami Ingredient

FEAST Ingredients umami ingredient is rich in natural umami compounds, certified organic, clean-label and made from Danish legumes and salt. It enables food producers to deliver what consumers are asking for in terms of inexpensive, clean label and delicious food products.

Product Details

Technology

We have built a technology platform using precision fermentation, from which we can create functional ingredients that are based on a single input of any type of legume seed. Legume seeds provide the micronutrients that enable microorganisms to act as micro-factories, producing essential components for our ingredients’ functionalities. Legumes facilitate soil health being nitrogen-fixing plants and reducing the need for synthetic fertilizers that require large amounts of energy to be produced.

No GMO and toxic chemicals are added in our production process, we use the whole legume seed and no food waste stream is generated. Our products offer competitive prices and functionality to existing solutions while featuring consumer-friendly labeling (fermented [insert legume], salt) and are all organic.

Charlotte Vinther Schmidt

Co-Founder & CTO
Charlotte has a background as food science engineer and has a Ph.D. within food science and technology, focused on umami taste and food texture. She has experience in new product development, ingredient replacement, research, design of experiments, and outreach. Charlotte is personally motivated to turn life science driven research into practical application and business opportunities that can support the delicious taste of plant-based food and the green transition of our food system.

Julen Ordeñana Manso

R&D & research scientist
Julen has a background in bioprocessing and fermentation. During his PhD in DTU, he worked on processing agricultural byproducts for the production of food ingredients. He is excited about developing new, sustainable methods for the production of tasty ingredients that will help in the global transition towards a more plant-based diet
